Designed as a batch premix that's bursting with tastes of a holiday season, which makes it ideal for your festive gathering. Save the extra cordial to use in breakfast cocktails, sweets, or to make additional servings of bikinis.
Bikini Recipe
Serves 10 guests
To make the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Cocktail (yields 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Method
Making the Syrup: Put the listed items into a pan, bring to a light boil, stirring until the sugar dissolves. After that, take off the burner and let it to cool completely. Decant to a clean bottle, cap it keeping it chilled, it will last for up to a month.
To make Batch Mix: Pour the specified liquid ingredients into one large bottle, allow it to infuse for one hour, then strain preferably using a fine cloth, so it's fully clarified.
When ready to serve: Add 85ml from the cocktail base to a mixing glass filled with ice, and stir lightly for a minute until cold. Filter into a cold coupe glass or similar, top with a few cranberries and finish using a brief mist of mandarin oil above the glass.
